TGIF!!

I need this weekend! I really do.  A day to sleep in and laze during snowy winter weather is a must.  It started snowing right after lunch yesterday and has not stopped.  Yes, I live in quite the "Winter Wonderland".

I've got some exciting new posts coming up this weekend, so I'm gonna keep this short.  I've been keeping my promise of taking more pics.  Last night's dinner was shrimp tacos with lettuce wrapping instead of tortillas.  It was so yum.


























I basically just spread refried beans onto a leaf of butter lettuce then topped with guacamole, then shrimp I had charred in a pan with a little fajita seasoning, and topped with salsa.

I love easy meals!  For some reason my energy was VERY down at the gym last night.  I was having a tough time getting through my workout.  I think it's linked to the fact that I had zero carbs yesterday.  But today's another day & thank the lord it's not all cardio.  Today's Legs & Back.  I will do a 5 minute cardio warm-up, then get straight into it.

Looking forward to the weekend of: cooking for my friends tonight, cheat day tomorrow & hike on Sunday, then the SUPERBOWL.  Going to a pot luck so making my Mom's Chili and something sweet, just don't know what yet.  I was going to make the Coconut Crack Bars but then I realized most of my friends don't like coconut, CRAZY!!  You know how I love to tweak recipes so I was thinking about doing a chocolate chip cookie pie but with a shortbread crust?  We'll see, but I'll definitely post the recipe.

I really wanted a warm breakfast this morning so I went to Starbucks for a coffee, decaf of course, with SF Vanilla and NF Milk and then got a plain oatmeal and added honey and strawberries.  Delish!
